LOT HISTORY

Alta Mogiana is a region in the north of São Paulo state, encompassing about 15 municipalities. With over a century of coffee-growing tradition, it is recognized worldwide for the exceptional quality of its coffees. Its geography, characterized by plateaus and gentle mountains at altitudes between 900 and 1000 meters, offers ideal conditions for cultivating high-quality coffee.

In the water decaffeination process, the silverskin of the green coffee beans is removed using steam and air. The water then extracts the soluble substances, including caffeine. The caffeine is removed from the solution with activated carbon, and the caffeine-free liquid is reintroduced into the beans after an intermediate drying stage. Finally, a final drying process is carried out to restore the coffee's original moisture level.
