Tasting notes: A complex coffee with aromas of red wine. It's a mellow coffee with notes of mango and peach. It has a juicy acidity and a velvety texture.
LOT HISTORY
This winemaking process is so named because the techniques involved have been borrowed from the wine industry, although similar techniques can be found in many products derived from controlled fermentation. The coffee cherries are fermented in sealed, oxygen-free stainless steel tanks with careful temperature control.
The Cherries are placed in a stainless steel tank submerged in water. Thanks to a valve, CO2 is released in a controlled manner. This results in a more active fermentation process and a higher concentration of sugars. The end result is a rich and sweet cup that offers a lot of complexity.
