LOT HISTORY
Albaney Fajardo has been a coffee producer for approximately 15 years. Together with her husband, she manages Finca Renacer, a 2-hectare farm located in the community of Albania, in the municipality of La Argentina, Huila. She has a deep passion for working with coffee, as it has brought her peace of mind. In addition to coffee farming, she and her husband are beekeepers, harvesting honey twice a year and considering the bees their friends on the farm.
This washed coffee is fermented for an average of 64 hours after pulping and sun-dried on raised beds for 14 to 20 days. Albaney Fajardo, along with her husband, carries out the processing with meticulous care, manually assessing the condition of the beans to determine the optimal drying time, which is then validated through laboratory tests. Their experience guarantees precision at this crucial stage of the coffee's final quality.
