LOT HISTORY
Ethiopia is synonymous with floral, citrusy, and fruity coffees of exceptional elegance. Its traditional washed and natural processing methods are prized gems in the world's best coffee shops. This Honey-processed lot represents our effort to explore and discover unique, distinctive lots from a land as rich in tradition as Ethiopia.
This Honey-processed lot is especially sweet, delicate, and complex, showcasing the quality and excellence of the Heirloom variety. Ripe cherries are partially depulped—retaining some of the mucilage—and undergo controlled fermentation before washing. Afterward, the coffee is sorted by density and slowly dried on raised beds to preserve sweetness and highlight aromatic complexity. It offers a complex profile and a process that truly expresses the character of the Heirloom variety.

This means these light roasts can also work beautifully as Single Origin espressos, giving you the chance to enjoy the coffee in both styles while fine-tuning your recipe with greater precision.
We offer these guidelines to help you develop a recipe, but please keep in mind that the ideal settings may vary depending on your machine, grinder, and water.*
Familia Osorio recommends allowing your coffee beans to rest properly. Degassing is key to achieving the cleanest, most flavorful cup. We recommend resting coffee intended for espresso for 10 days and filter coffee for at least 14 days. Brew and discover how your coffee's flavor evolves

This coffee offers a subtle cup profile. It features aromas of Earl Grey tea and lemon. On the palate, it is honey-like, with notes of caramel, blueberry, and lemon. Light and sweet. The "sweet spot" for extraction—where the balance is best—is around 29–32 seconds.
