Tasting notes: Fruity aromas of orange and strawberry. On the palate, notes of strawberry and red apple with hints of chocolate. It's a juicy coffee with a silky texture, clean and elegant.

LOT HISTORY

Sironko takes its name from the river that saved the lives of the tribes who settled in the area. In the Lumasaba language, it means comfort and peace .

The Sironko station is located in Budadiri. There, coffee from communities that still depend on that river is processed, offering agricultural training and support to women and youth to strengthen coffee quality and local well-being.

The cherries, picked by hand, arrive at the Sironko washing station, where they are sorted by quality and density — the heaviest are the best quality.

They are then removed from the soil and mechanically demucilaged using an Eco-pulper. Farmers use the pulp as organic fertilizer, and the wastewater is treated and reused in local crops.

The wet parchment is dried in a controlled manner in temperature-regulated chambers; the first phase lasts about 7 hours and avoids defects from traditional drying.

In total, the drying process lasts between 21 and 48 hours, until the recommended 12% humidity is reached.

This means that these light roasts also sometimes work as Single Origin espressos, allowing you to enjoy the coffee in both methods by experimenting with its recipe more precisely.
