PEABERRY, WHAT IS IT?

Inside a coffee cherry , you'll find two seeds, with their flat fronts facing inward and their rounded backs facing outward. What is extracted, processed, and roasted for consumers to enjoy are the seeds of the coffee cherry—the coffee beans.

It is estimated that snails make up about 5 to 10% of a coffee harvest. They occur as a result of a natural mutation, or a defect within a coffee cherry, where an ovule fails to be pollinated. This results in extra space for the single developing seed. Within this space, a larger, rounder seed grows. This is a snail.

Not all single-seeded cherries can be defined as snail cherries, as it is possible for only one regular, flat-sided seed to develop inside a cherry.

Snails are usually sorted and separated during the post-harvest process. They are separated by size using a sieve or, alternatively, sophisticated machinery that quickly classifies them according to weight and size.

SHOULD SNAILS BE CONSIDERED SUPERIOR?

Peat peaberries are interesting, that much is undeniable. However, whether they are superior to regular coffee beans is debatable. The quality of a peat peaberry is affected by the same variables that affect regular coffee beans, such as variety , processing, and altitude. Producers need to ensure that their overall farming practices are of high quality, which, in turn, will produce high-quality peat peaberries. This should be the priority, and to ensure this quality, producers should strive for consistency throughout the entire process.

Huila is a department located in the southern part of the Andean region, and is currently the leading department in Colombia in both production and quality.

This department borders Tolima, Cundinamarca, Meta, Caquetá, and Cauca, and is home to rivers flowing through mountains, showcasing its diverse landscapes with various natural features such as volcanoes, lowlands and rolling hills, rainfall, winds, and temperatures that vary according to altitude. It is known that within this department there are different thermal zones, including hot, páramo (high-altitude moorland), cold, and, most prevalently, temperate. But beyond these privileged geographical conditions, the commitment and dedication of Huila's producers to the quality of the grain, carefully overseeing each stage of the process, have contributed to enhancing the grain's intrinsic qualities.

Coffee farming in this department is characterized by coffee production with awareness of sustainable exploitation, taking into account soil conservation, respect for natural forests and use of environmental resources.

Its producers are aware that quality and consistency are key to improving their income, with additional social programs and services that help improve their quality of life, viewing the farm as a business unit that must be profitable and competitive, carrying out the development of this activity under semi-shade, having planted 139,138 hectares in 35 municipalities.

THE EXPORTER

Cadefihuila was founded in 1963 as an initiative and response to the need to market parchment coffee from producers in Huila, but also as a way for small producers to unite in a cooperative entity that would represent their interests. This is the cooperative we have today with its 3,950 members.
