Maria Elena Vides, with the help of her family, produces coffee under the shade of native timber trees.
The coffee cherry harvesting process begins with a meticulous selection of ripe fruit. A flotation tank is then used to separate any unripe or damaged beans.
The next step is dry processing. Due to the area's climate, drying tunnels are necessary. Manual handling is used to ensure a uniform drying process, and daily checks are carried out to guarantee proper drying control.
