The Christmas is a date that doesn't need to be marked on our calendars. We're so aware of it that we don't need any reminder to know that in a few days we'll be together celebrating an event that means so much to everyone.
We are proud to present our XMAS COFFEE!! A batch of yellow Bourbon variety. Dry-processed for 24 hours. Then placed in Grain Pro bags for up to 90 hours at a controlled temperature below 22ºC. In this environment, the bacteria assimilate a greater quantity of sugars, releasing lactic acid.
THE FARM
Finca La Ilusión is our home and laboratory in Colombia. We cultivate unique varieties. We are constantly evolving our processes and gaining experience in natural farming. For this reason, we can confidently say that this batch is the best we have ever processed without water.
We believe in a different kind of harvest. Respect and care for every detail, and the satisfaction of a job well done, are what drive us to continue with this project.
Until two years ago, we only processed washed coffees. We have gained experience in the natural process. Our coffees are clean, transparent, and complex.
